Couscous Patties with Beet-Yogurt Sauce

1 1/4 cup water
1 cup couscous
salt & pepper
1 cup Greek-style yogurt
1 small beet, peeled and grated (large holes of grater)
2 garlic cloves, minced
2 tbsp fresh mint, chopped
2 tbsp fresh dill, chopped
1 cup frozen peas, thawed
1 large egg, plus 1 egg yolk
2 tbsp flour
olive oil

Boil water in small saucepan. Stir in couscous, 1 tsp of salt, cover and remove from heat. Mix yogurt, beet, garlic, 1 tbsp mint, 1 tbsp dill. Season with salt and pepper.

Roughly mash peas in large bowl. Mix in remaining mint and dill, egg and yolk, flour, couscous and 1/4 tsp pepper.

Press 1/3 cup couscous mixture into a measuring cup, and invert measuring cup onto baking sheet or other flat surface. Repeat with remaining couscous. Heat olive oil in large nonstick skillet over med-high heat until shimmering. Transfer 4 patties to pan and gently flatten with a spatula. Cook until golden brown and crisp (approx 3 min per side) and transfer to serving platter. Repeat with remaining patties. Serve with beet-yogurt sauce.

*I had a little trouble keeping the patties together at first, but found that flattening them by hand (much like hamburger patties) was helpful.

  • Today is my 10 hour day at the studio, so I take a long lunch for noon yoga. My tripod headstand is improving! LOVE the class and teacher. I'll be taking as many of her classes as I can!
  • My hips are sore and tight. My extensions aren't their best. Is this punishment for no ballet class over the two week holiday? Or is this the yoga and working muscles differently for the past few weeks? I notice more flexibility in my spine, though my arabesque seems the same. May begin doing a warm up barre before my first class.
  • Made my first vegetarian meal. NOT SO BAD! Whole gran baked ziti with onions, yellow squash, zucchini, and tomatoes. Spinach salad (iron, please).

I plan to start two-thousand twelve with clarity and peace. In order to do so, I have decided that for one entire month I will practice yoga daily (even if it’s just for ten minutes at home), lead a vegetarian lifestyle, and eliminate alcohol. Wish my luck!


JAN 1: Drive in from Austin, and despite my stuffy nose drag myself to a 5:30 beginners class. I’m definitely an adv beginner/beg intermediate at this point, but my inner ballerina appreciates the additional time a less challenging class provides to correct my alignment and ensure I’m doing the poses and movements properly.

Walk to have dinner with the fam after class and find them celebrating 2012 with Louis Roederer and caviar. I have smoked gouda and water.

JAN 2: First day back at work.  Lunch with co-workers at a Lakewood Tex-Mex fave and ordered Bean & Cheese Flautas. I HATE beans, but right now it’s all about the protein, baby. After a bite realize they were beef. Sent back. Irritated. Discouraged. Received a free lunch. Slightly less irritated.

JU’s class at the Lakewood location when I finish teaching. The movement is slightly different than what I’ve become accustomed to, but it reminds me of a friend’s mothers’ classes (she also teaches Alexander Technique). My biggest concern is having trouble continually linking breath to the movements because she so thoroughly explains different aspects of the practice. As a technician I love the information, but I don’t find the class as physically or spiritually satisfying.

1. I just received the best basket of veggies that I’ve ever gotten. It’s my last before I move, so I’m glad to see it end on a super high note!

2. Today I hemmed two pairs of amazing (and expensive) pants that I’ve owned for over a year but never got around to taking to get altered. Too bad it’s 102 degrees.

3. Butch Cassidy at Lance Pants’ place tomorrow.

4. I’m in love with my vintage Mexican dress.

5. Boat day with Princess & his worker bees on Friday!
